Fried Green Tomatoes

I have never had fried green tomatoes until I was on vacation visiting my parents. They have a beautiful garden with the most amazing fresh vegetables!

There is nothing that can compare then garden fresh tomatoes, so I figured this was the best opportunity to try such a dish.

The ingredients are pretty simple, I have read some recipes before that use cornmeal as an outer coating although with the tomatoes being so fresh I didn’t want to cover their natural flavour.

These can be served as a side dish to any meal or delicious with breakfast!

Fried Green Tomato

Ingredients:

  • 4 to 6 Green Tomatoes
  • Salt
  • Pepper
  • 1 Tbsp vegetable Oil

Method:

  1. Heat vegetable oil on medium heat in a non stick frying pan
  2. Slice the tomatoes into 1/4 – 1/2-inch slices.
  3. Salt and pepper them to taste.
  4. Place tomatoes in frying pan for approximately 3 minutes or until golden.
  5. Gently turn and fry the other side.

Red Pepper Egg in a Hole

I came across this recipe that I think is brilliant! It’s like an egg-in-a-hole, but with out the bread and extra carbs. it’s a better choice for more and more people who choose to eat less carbs or are have gluten-free diets.

The possibilities are endless, you could add just about anything you want to dress up this dish. Either way it’s a pretty fast and delicious dish. I hope you enjoy!

Red Pepper Egg in a Hole

Ingredients: 

  • Eggs
  • 1 Red Pepper
  • Chives
  • Parmesan Cheese
  • Salt
  • Pepper

Method: 

  1. Using a large nonstick frying pan, place on medium heat
  2. Wash and cut pepper horizontal 1/4 inch in thickness.
  3. Place pepper in a frying pan, hold down to create a seal
  4. Crack egg into the center of each pepper,
  5. Sprinkle Pepper, Salt Chives and Cheese on the top of each
  6. Cook for approximately 2-3 minutes

Chilled Cucumber and Dill Soup

This chilled soup is perfect on a hot summer day. It’s easy to make and has minimal prep time. I typically peel the cucumbers although leaving some of the skin on adds colour and texture to the soup.

Chilled Cucumber and Dill Soup

Ingredients:

  • 4 Cucumbers (Seedless)
  • 1/2 Red Onion
  • 750G Yogurt (Original Astro Biobest)
  • Dill (Fresh Chopped)
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1/2 Lemon (Fresh Squeezed)
  • 1/4 Cup Parmesan (Grated)
  • 1/4 Tsp Chilli Pepper Flakes (Optional)

Method:

  1. In a large bowl peel and chop cucumbers into cubes.
  2. Add chopped red onion and yogurt.
  3. Using a handheld electric blender, emulsify cucumber, yogurt and onion until a smooth consistency. is achieved
  4. Stir in freshly chopped dill, salt, pepper, lemon juice and grated parmesan.

Prep time: 10 minutes

Side Note: If you want to make this soup a little more filling it’s also great with crab meat or avocado slices.
